This oven roasted asparagus with lemon zest is so great throughout the year! I’m going to share with you how I like to make this dish. I hope you guys enjoy it as much as I do. I cook this in our house once a week. It is super versatile and your family or guests will love it.
Pre-heat oven to 425 degrees. Wash and trim your asparagus. I like to trim off 1 to 2 inches, before cooking.
Arrange your asparagus on your baking tray and drizzle with olive oil
Now sprinkle salt and pinch of black pepper before putting the dish in the oven
After 10-12 minutes, remove the dish from the oven. Zest your lemon evenly over the asparagus
Now sprinkle your Parmesan or Pecorino cheese evenly over the asparagus. Return to the oven for 3-5 minutes.
Transfer your Roasted Asparagus to the a serving platter and squeeze fresh lemon over the dish. Enjoy!
This dish goes really well with everything. I usually serve with with fish, scallops or over a bed of salad. For more recipe ideas, check out our database on the blog. Eat well, live well.
