Oven Roasted Asparagus With Lemon Zest

This oven roasted asparagus with lemon zest is so great throughout the year! I'm going to share with you how I like to make this dish. I hope you guys enjoy it as much as I do. I cook this in our house once a week. It is super versatile and your family or guests will love it.

Ingredients

  • 1-2 tbsp olive oli
  • 1 bunch asparagus
  • 2 teaspoons salt
  • 1-2 teaspoons black pepper
  • 1/3 cup parmesan or pecorino
  • 2 tablespoons lemon zest
  • 1 tablespoon Lemon juice

Instructions

  • Pre-heat oven to 425 degrees. Wash and trim your asparagus. I like to trim off 1 to 2 inches, before cooking.

  • Arrange your asparagus on your baking tray and drizzle with olive oil

  • Now sprinkle salt and pinch of black pepper before putting the dish in the oven

  • After 10-12 minutes, remove the dish from the oven. Zest your lemon evenly over the asparagus

  • Now sprinkle your Parmesan or Pecorino cheese evenly over the asparagus. Return to the oven for 3-5 minutes.

  • Transfer your Roasted Asparagus to the a serving platter and squeeze fresh lemon over the dish. Enjoy!
