Purple Steel Cut Oats
My Purple Steel Cut Oatmeal is one of my favorite morning meals during the week. It is loaded with antioxidants and will keep you full throughout the morning. My favorite way to enjoy this recipe is with wild blueberries, banana, tart cherries, walnuts, almonds, cashews and peptias. As you’ll see in the tutorial below or the video I created, I like sprinkling on cacao powder and a little maple syrup at the end. I hope you enjoy this as much as I do. I think you will!

  1. Start with a medium size to large size sauce pan. The most time intensive part of this recipe is keeping the oats moving in the pan as they continue to cook down. 
  2. Now you’ll add your favorite nut milk. I prefer almond milk but you could use coconut milk, help milk or anything other milk that you desire. You’ll want 2 cups of milk for every half cup of steel cut oats.
  3. Next add your oats. Like I said above, you’ll want about 1/2 cup to 3/4 of cup to serve 2 people. For every 1/2 cup of oats you need 2 cups of milk. I would rinse your oats before adding them to your milk. You could also soak them to speed up the process. 
  4. Once your milk and oats start to boil, lower heat to low/medium and stir often while the oats soak up the milk.
  5. This is when I start prepping all my ingredients. Grab a small saute pan and add a drizzle of olive oil. About 2 teaspoons. Now add your walnuts, almonds, cashews and peptias. The goal here is to simply roast them low and slow until your oats are done.
  6. The next step is where the recipe gets its name. It is time to add your wild blueberries to the oats. You do this right towards the end where the oats are nearly cooked and the milk is almost evaporated. Add your blueberries and your oats will turn a beautiful purple color
  7. So, when your oats are done. Add the preferred amount to a bowl. Then organize the rest of your ingredients. I usually start by cutting my banana, adding the cherries, then the nut mixture, finishing with splash of maple syrup and a sprinkle of cacao powder (this is strong, so I don’t use a lot)
